美国有着令人心驰神往的、多元而又独特的饮食传统。这次活动邀请到了主厨罗朗先生(Michael Rosenblum),并与美国肉类出口协会合作。
罗朗主厨曾经担任骆家辉大使以及博卡斯大使的主厨。
活动请到了一位特邀嘉宾:杰西卡·哈里斯博士(Dr. Jessica Harris)。她是多本烹饪书籍的作者,这些书籍记录了美国各个历史时期非裔美国人的饮食和饮食之路。
如图所示,活动中用到的美国牛肉和猪肉产自位于美国农业生产腹地的数个州。牛肉是产自内布拉斯加州的美国农业部极佳级别(USDA Prime)牛肉,猪腩(即培根)产自俄克拉何马州,猪扒则产自艾欧瓦州的一个小农场。
美国传统上是在北至蒙大拿州、南至德克萨斯州、西至科罗拉多州以及东至伊利诺伊州的主要粮食生产和牧场地区附近饲养动物。
美国牛肉由美国农业部检查人员根据严格的客观标准进行分级—美国农业部极佳级别的牛肉部位价格高昂,但是传统上只占所有牛肉部位的3%或更少。
活动中喝的葡萄酒产自加利福尼亚州的纳帕谷。除了加利福尼亚州,俄勒冈州、华盛顿州、纽约州也生产许多获奖的葡萄酒,种植者也在越来越多地在那些本来不以葡萄酒闻名的州——包括弗吉尼亚州和科罗拉多州——酿制优质葡萄酒。
活动中用到的所有美国食材均可在中国大部分大城市的本地超市购买到。
The Ambassador hosted a dinner celebrating American Culinary Heritage – check out some of the pictures! The U.S. has exciting, diverse, and unique culinary traditions. The event featured Chef Michael Rosenblum and the Embassy partnered with the U.S. Meat Export Federation. Chef Michael previously served as chef to Ambassador Locke and Ambassador Baucus. The event featured a special guest, Dr. Jessica Harris. She is the author of many cookbooks documenting the foods and foodways of African Americans throughout American history.
The U.S. beef and pork pictured here and served at the event came from several states in America’s agricultural production heartland. The beef was USDA Prime from Nebraska, the pork belly (i.e., bacon) was from Oklahoma, and the pork chops were from a small farm in Iowa. The United States has traditionally raised animals near the major grain production and pasture regions stretching from as far north as Montana and as far south as Texas, and from Colorado in the west to Illinois in the east. The U.S. beef is graded according to strict objective standards by USDA inspectors – USDA Prime cuts receive a premium price, but traditionally account for only three percent or less of all beef cuts. The wine served came from Napa Valley, California. Aside from California, the United States produces many award winning wines from Oregon, Washington State, New York, and growers are also increasingly producing fine wines from states less known for their wines, including Virginia and Colorado. All of the U.S. ingredients served are available from local grocery stores in most of China’s major cities.
