In 1911, J.K. Daniels sculpted the Fair's firstbutter cow and was succeeded by J.E. Wallace of Florida. In Butter sculptinghas a long history at the Iowa State Fair. Every year, using unsalted butter,the fair’s sculptor creates a depiction of a cow being milked by a boy who iswaving to a woman. This has been an unofficial mascot of the fair since the1920s. Norma “Duffy” Lyon of Toledo, Iowa, began sculpting in 1960, andbecame the fourth person and first woman to sculpt for the fair beauties. In2006, after 15 years of apprenticing with Duffy, Sarah Pratt of West Des Moinesbecame the Fair's fifth butter sculptor.
