Assistant Commissioner Mark Rowley told reporters those injured were US, British, Australian and Israeli nationals.
One woman aged in her 60s was treated at the scene but died soon after.
Police said two other women and three men were injured in the attack, and while two of the injured remain in hospital, three have since been discharged.
The Department of Foreign Affairs and Trade said an Australian man and woman were injured in the attack.
The man has been discharged from hospital while the woman was expected to be discharged soon, a DFAT spokesperson said.
Another Australian woman was at the scene, but was not injured.
British detectives are questioning a 19-year-old Norwegian of Somali origin over the attack.

Police were called to the scene at 10:33pm (7:33am AEST) after reports that a man seen with a knife was injuring people at London's Russell Square.
The 19-year-old man was arrested minutes later, with one officer using a Taser on the man.
The arrested man is currently in hospital under police custody.
Xavery Richert, a French tourist staying in a youth hostel on the square, said he was near the scene of the attack when it happened.
"I was buying a beer when I heard a woman shouting who was being chased by a man," he told AFP.
"I thought it was a bag-snatching … she was not hurt. I came out for a cigarette, I went back, there were firefighters, police, and then I saw the body under a sheet."

"All of the work we have done so far increasingly points to this tragic incident as having been triggered by mental health issues," Mr Rowley, who is Britain's most senior anti-terrorism officer, said.
"We believe this was a spontaneous attack and that the victims were selected at random.
"So far we have found no evidence of radicalisation that would suggest that the man in our custody is in any way motivated by terrorism."
Homicide officers are investigating the attack, with the support of the counter-terrorism unit.
Police are calling on anyone with information on the attack to contact authorities.
Scotland Yard had just announced plans to put an extra 600 armed police on the streets after a spate of deadly attacks in Europe.
Mayor of London Sadiq Khan urged Londoners to remain "calm and vigilant" after the incident.
"The safety of all Londoners is my number one priority and my heart goes out to the victims of the incident in Russell Square and their loved ones," Mr Khan said.
"A man was arrested at the scene. Police have spoken to him and are seeking to establish the full facts including motives for this attack.
"I urge all Londoners to remain calm and vigilant. Please report anything suspicious to the police. We all have a vital role to play as eyes and ears for our police and security services and in helping to ensure London is protected," he said.
