Course 1:
Sea Tangle Soup, made with deep broth from konbu stock, mash potato, wasabi, chive and caviar

Course 2:
A selection of modern sashimi, Pacific Oyster with distilled tosazu soy sauce and white wine jelly, fresh farmed Hiramasa kingfish from Port Lincoln and Hokkaido scallops with salmon caviar

Course 3:
Smokkim Bul-Go-Gi, strips of vegetables wrapped in pan-grilled Wagyu fillet, and marinated in caramelised-onion-infused Teriyaki sauce

Course 4:
Ju-Muk-Bab, Korean-style arancini with kimchi, onion and aged parmesan
(韩式炸饭团)
Course 5:
Bossam, slow cooked pork belly served with radish pickle and a soy caramel sauce
(酥脆五花肉)
Course 6:
For mains choose from pan seared barramundi marinated overnight in a traditional Korean chili and miso paste or aged Angus scotch fillet on an eggplant bed with gochujang sauce, house pickle and steamed vegetables
